New Summer Mint Salad


Every time May rolls around I get excited about all the super fresh herbs and fruits (figs!) that come back into season. My favorite meal remains fresh figs, cheese, raspberries, almonds and wine (of course) and every year I do a new version of my summer salad, which this year is a simple combination of fresh spinach, tomatoes, fresh mint and basil. I chop equal parts of everything, add as much feta cheese as I am in the mood for and dress with rice vinegar, olive oil and a squirt of sriracha sauce. Eat immediately.
